RECIPE: Girl Scout Cookies Stuffed Chocolate Chip Cookies

My best friend said this is like eating a pregnant cookie, so I think these would be great for baby showers, a pregnant friend… or anyone who likes delicious cookies. This is essentially 3 cookies in one, so they are BIG and satisfying.

  1. Preheat oven to 350⁰F. In a stand or electric mixer cream butter and sugars until well combined. Add in eggs and vanilla until well combined.
  2. In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients, and then add chocolate chips until just combined.
  3. Take a scoop of cookie dough and place on top of a cookie. Take another scoop of dough and place on bottom of the cookie. Seal edges together by pressing and cupping in hand until cookie is enclosed with dough (this reminded me of playing with Play-Doh).
  4. Place onto a parchment or Silpat lined baking sheet and bake cookies ~10 minutes. Let cool for 5 minutes before transferring to cooling rack.
  5. Enjoy! Makes about 20 VERY LARGE cookies.
Recipe Notes

NOTES: If you like really large cookies which spread when baking, form and bake the dough at room temperature.

If you like your cookies a little more compact and tall, then put your cookie mounds in the freezer and chill for at least 15 minutes before baking. If this is the case, you could assemble these cookies and keep them in a freezer bag and simply bake when you get a hankering!  Cookies on command!
